Every bakery in Chur has its own recipe and the debate over the best version is perpetual.
Graubünden walnut tart — a buttery pastry shell filled with caramelised walnuts and cream. The defining sweet speciality of Switzerland's largest canton.
Make pastry: rub flour and butter. Add icing sugar and 1 egg. Chill 30 minutes.
Caramelise sugar to deep amber. Add cream carefully. Stir in walnuts and honey.
Line a tart tin with pastry. Pour in walnut filling.
Top with remaining pastry. Glaze with beaten egg. Bake at 190°C for 35-40 minutes. Cool completely.
Let filling cool slightly before pouring into pastry — very hot filling can make the base soggy.
