The Warsaw dish. Served from street stalls throughout Polish history. King Władysław II was reportedly fond of it.
Warsaw beef tripe soup — tripe slow-cooked in a rich broth with vegetables, marjoram and ginger. Poland's most restorative winter soup.
Boil tripe in water for 2 hours until tender. Drain.
Simmer tripe in fresh stock with all vegetables and spices for 1 more hour.
Season generously with marjoram, ginger and nutmeg.
Tripe needs two separate boilings — the first removes bitterness, the second builds flavour.
