Zacuscă is traditionally made in huge batches each autumn to be preserved in jars for eating throughout the Romanian winter.
A rich Romanian vegetable relish of roasted aubergine, pepper and tomato slow-cooked into a thick, spreadable preserve — a pantry staple across the country.
Roast aubergines and peppers until soft and charred, then peel and finely chop.
Soften onion in oil until translucent.
Add all the vegetables and simmer slowly, stirring often, for at least 1 hour until thick and deeply reduced.
Cool completely and store in sterilised jars, or serve immediately as a spread with bread.
Cook low and slow, stirring regularly — zacuscă needs time to reduce fully or it stays watery.
