Created for Count Stroganov in St Petersburg in the 1890s. Spread globally via Russian emigrés after 1917.
Russian sautéed beef in sour cream sauce — thinly sliced beef fillet with mushrooms and onion in a tangy sour cream sauce. The great dish of 19th century Russian aristocracy.
Fry beef in very hot butter in batches — don't crowd the pan. Remove.
Fry onion until golden. Add mushrooms. Cook 5 minutes.
Return beef. Add mustard and stock. Stir in sour cream. Heat gently.
Garnish with parsley. Serve with noodles.
Add sour cream off the heat — boiling makes it curdle.
