The breakfast of Spain. Churrerías open at 7am and serve until midday. Dunking in chocolate is non-negotiable.
Spanish fried dough sticks — crispy, ridged dough fried until golden, rolled in cinnamon sugar and dunked in thick hot chocolate. Spain's universal breakfast and merienda.
Mix flour with boiling water and salt to form a thick dough. Beat until smooth.
Fill a churrera or piping bag. Pipe directly into hot oil at 180°C.
Fry 3-4 minutes, turning, until golden. Drain.
Roll in cinnamon sugar. Serve with thick hot chocolate.
The water must be boiling when added — this gelatinises the starch and creates the chewy interior.
