Switzerland has been at war with France over the invention of the meringue since the 18th century.
Swiss meringues — crisp and brilliantly white, paired with thick double cream and fruit. The Bernese Oberland claims the meringue as its own.
Whisk egg whites to stiff peaks. Add sugar a spoon at a time, whisking continuously.
Fold in vinegar and cornflour.
Pipe or spoon onto baking paper in large rounds.
Bake at 120°C for 90 minutes. Turn oven off. Leave inside to cool.
Sandwich pairs with whipped cream. Serve with berries.
The low-and-slow bake dries rather than colours the meringue — the goal is pure white and bone-dry.
