Cheese sauce is the heart of British comfort food, from cauliflower cheese on the Sunday roast table to macaroni cheese. Strong, mature Cheddar gives the best flavour.
A silky, tangy Cheddar sauce built on a classic white sauce base. The comforting partner for cauliflower, macaroni and leeks.
Melt the butter in a pan, stir in the flour and cook gently for 1-2 minutes.
Gradually whisk in the warm milk and cook, stirring, for 6-8 minutes until thick and smooth.
Take the pan off the heat. Stir in the grated cheese a handful at a time until melted.
Stir in the mustard and nutmeg, and season to taste. Use straight away, or cover the surface with baking paper to keep it from skinning.
Add the cheese off the heat — boiling the sauce after the cheese goes in makes it grainy and oily. A little mustard sharpens the cheese without a noticeable mustard taste.
