The full English developed from Victorian-era country house breakfasts and became democratised as a working-class meal in the 20th century. Every element is disputed — beans divide opinion most sharply.
Britain's greatest morning meal — bacon, eggs, sausages, beans, mushrooms, tomatoes and toast on one plate. An institution that requires no justification.
Start sausages first — grill or fry over medium heat for 15 minutes, turning.
After 5 minutes add bacon and grill until crisp.
Fry mushrooms and tomatoes cut-side down in butter.
Heat beans in a small pan. Season.
Fry or scramble eggs to preference.
Toast bread. Butter generously.
Arrange everything on a warm plate. Serve with brown sauce or ketchup.
Everything must arrive at the table simultaneously and hot. The mark of a great fry-up is timing, not technique.
