Onion gravy is the signature sauce of bangers and mash, toad in the hole and the Yorkshire pudding. It is the reason British pubs always seem to smell of caramelised onions on a Sunday.
Deep, sweet and glossy — slow-cooked onions in a rich beef stock gravy. Made for sausages, mash and Yorkshire puddings.
Melt the butter in a wide pan over a medium-low heat. Add the onions and sugar and cook slowly for 25-30 minutes, stirring now and then, until deeply golden and soft.
Sprinkle in the flour and cook, stirring, for 1 minute.
Gradually pour in the stock, stirring, then add the Worcestershire sauce and vinegar.
Simmer for 8-10 minutes until the gravy has thickened. Season to taste and serve hot.
Don't rush the onions. Slow, gentle cooking is what gives the gravy its sweetness — high heat only burns them.
