Welsh Rarebit

United Kingdom

Welsh rarebit has been recorded since the 18th century, its name possibly a tongue-in-cheek nod to a cheese dish standing in for rare rabbit meat.

A rich British savoury toast topped with a bubbling mustard and ale cheese sauce, grilled until golden — deceptively simple and deeply comforting.

Ingredients

250gstrong cheddar, grated
100mlale or stout
1 tbspWorcestershire sauce
1 tbspEnglish mustard
4 slicesthick bread, toasted

Method

1

Melt cheddar gently with ale, Worcestershire sauce and mustard, stirring until smooth.

2

Cool slightly until thickened to a spreadable consistency.

3

Spread generously over toasted bread.

4

Grill until bubbling and golden brown on top, about 3-4 minutes.

Chef's Tip

Let the cheese mixture cool and thicken before spreading — too thin and it runs off the toast under the grill.
