Joojeh Kabab

Iran

Joojeh kabab is a fixture of Persian restaurants worldwide, prized for the bright saffron colour the marinade leaves on the chicken.

Persian saffron and lemon marinated chicken, grilled over open flame until charred and juicy — a staple of Iranian kebab houses and family barbecues alike.

Ingredients

800gchicken thigh, boneless
2lemons, juiced
1onion, grated
pinchsaffron, steeped in hot water
2 tbspolive oil

Method

1

Combine lemon juice, grated onion, saffron water and olive oil into a marinade.

2

Marinate chicken for at least 2 hours, ideally overnight.

3

Thread onto skewers and grill over high heat, turning regularly, for 12-15 minutes until charred and cooked through.

4

Serve with saffron rice and grilled tomato.

Chef's Tip

Grate the onion rather than dicing it — this releases enzymes that tenderise the chicken as it marinates.
