Both Palestine and Jordan claim musakhan. The sumac-soaked bread is unlike anything else in the region.
Roasted chicken on sumac-soaked bread — chicken roasted with caramelised onions and sumac, served over flatbread soaked in the cooking juices. Palestine and Jordan's most beloved dish.
Fry onions in generous olive oil until golden, 25 minutes. Add sumac and allspice.
Arrange chicken over half the onions in a baking dish. Top with remaining onions.
Roast at 200°C for 45 minutes.
Lay flatbreads on a platter. Top with onions from the pan. Arrange chicken on top.
Soak the bread in the onion-sumac oil — it should be deeply saturated, not dry.
