Disputed between Israel, Palestine, Lebanon and Jordan. The original is from Nablus.
Shredded pastry cheese dessert — kadaifi pastry layered with sweet cheese or semolina, baked until golden, soaked in orange blossom syrup. A Middle Eastern masterpiece.
Toss kadaifi with melted butter. Press half into a buttered baking dish.
Layer cheese over. Top with remaining kadaifi.
Bake at 190°C for 25-30 minutes until deep golden.
Make syrup: boil sugar and water 5 minutes. Add orange blossom water.
Pour syrup over hot knafeh. Garnish with pistachios.
Pour the syrup while the knafeh is still hot — it absorbs immediately.
