Debated between Jordan, Palestine and Lebanon. The Nablus version with white cheese is considered the benchmark.
Shredded pastry and cheese dessert — a bed of kataifi pastry filled with stretchy cheese, soaked in rose water syrup and topped with crushed pistachios. Nablus claims the original.
Toss kataifi with melted butter. Press half into a buttered baking dish.
Layer cheese over. Top with remaining kataifi. Press firmly.
Bake at 190°C for 30 minutes until golden.
Flip onto a serving plate. Pour hot syrup over immediately. Top with pistachios.
The syrup must be hot when poured over — it soaks in properly only while both are warm.
