Manakish is Lebanon's ubiquitous breakfast bread, sold hot from bakeries each morning and folded in half to eat on the go.
A simple Lebanese flatbread topped generously with za'atar and olive oil, baked until crisp at the edges — a beloved breakfast eaten folded and on the go.
Make a soft dough from flour, yeast and water. Prove 1 hour.
Divide and roll into thin rounds.
Mix za'atar with olive oil into a paste and spread generously over each round.
Bake at 220C for 8-10 minutes until the edges are crisp and golden.
Spread the za'atar paste right to the edges — the crust should be just as flavourful as the centre.
