Mentioned in medieval Arab cookbooks. Its name means spotted — the lentils in the rice resemble spots.
Lentils and rice topped with deeply caramelised onions — one of the oldest recipes in the Arab world. Simple, nourishing and surprisingly complex in flavour.
Fry onions in generous olive oil over medium heat for 40 minutes until very dark and crispy. Remove half.
Cook lentils until almost tender. Add rice and spices. Add water to cover. Cook 15 minutes.
Serve topped with crispy onions and yogurt.
The onions need a full 40 minutes — they are the entire point of the dish.
