Saltah

Yemen

Yemen's most iconic dish. The fenugreek froth — hulba — is unique to Yemeni cooking and gives saltah its identity.

Yemen's national dish — a bubbling stew of meat and vegetables topped with fenugreek froth and zhug chilli paste, served in a stone bowl.

Chef's Tip
