The bread of Indigenous peoples across Canada. Made on camping trips, at powwows and in home kitchens. Simple, nourishing and enduring.
Canadian Indigenous fry bread — a quick bread of flour, baking powder and water, either baked or fried. The survival bread of First Nations and Métis people.
Mix flour, baking powder and salt. Add water and oil to form a soft dough.
To bake: shape into a round. Bake at 190°C for 20 minutes.
To fry: shape into flat rounds. Fry in oil until golden, 3-4 minutes per side.
Don't overwork the dough — bannock should be tender, not tough.
