The dish of Jamaican birthday parties, weddings and Sunday dinners. Goat is preferred over lamb for its stronger flavour.
Jamaican slow-cooked curried goat — goat marinated in Jamaican curry powder and slow-braised until falling from the bone. The dish of every Jamaican celebration.
Marinate goat with curry powder, garlic, ginger and thyme overnight.
Brown in oil. Add onion, spring onion, Scotch bonnet and water.
Braise covered 1.5-2 hours until very tender.
Serve with rice and peas.
Leave the Scotch bonnet whole — it flavours without making the dish uneatably hot.
