Fried plantain is eaten across the Caribbean, West Africa and Latin America. In Jamaica, its sweetness is the cooling counterpoint to spicy jerk and curries.
Sweet, caramelised ripe plantains fried until golden. The classic Jamaican side for jerk chicken, curry goat and ackee and saltfish.
Peel the plantains and slice them diagonally into 1.5cm pieces.
Heat the oil in a frying pan over a medium heat.
Fry the slices for 2-3 minutes per side until deep golden brown and caramelised at the edges.
Drain on paper, sprinkle with a pinch of salt, and serve hot.
Choose plantains that are very ripe, with mostly black skins. The riper they are, the sweeter and more caramelised they fry.
