Birria

Mexico

Birria originates from the state of Jalisco, traditionally made for special occasions and celebrations, its rich broth now equally famous as the base for birria tacos.

A rich, deeply spiced Mexican stew traditionally made with goat or beef, slow-cooked in a chile-based broth until tender — festive, warming food.

Ingredients

1.5kgbeef chuck, cubed
4dried guajillo chiles
2dried ancho chiles
1onion
4garlic cloves
2 tspcumin

Method

1

Toast and soak the dried chiles, then blend with onion, garlic and spices into a smooth sauce.

2

Sear the beef, then add the chile sauce and enough water or stock to cover.

3

Simmer gently for 2.5-3 hours until the meat is completely tender.

4

Shred the meat and serve in bowls with the rich broth, alongside tortillas for dipping.

Chef's Tip

Toasting the dried chiles briefly before soaking deepens their flavour significantly compared to using them straight from the packet.
