Burger Sauce

United States

Special burger sauces are an American fast-food tradition, with a mayonnaise, ketchup and pickle base that is the descendant of Thousand Island dressing.

A creamy, tangy, slightly sweet sauce in the style of the classic burger-joint special sauce. Great on burgers, fries and wraps.

Ingredients

120gmayonnaise
2 tbsptomato ketchup
1 tbspAmerican yellow mustard
2 tbspdill pickles, finely chopped
1 tsppickle brine
1/2 tspsmoked paprika
1/2 tspgarlic powder
1/2 tsponion powder

Method

1

Mix the mayonnaise, ketchup and mustard together in a bowl.

2

Stir in the chopped pickles, pickle brine, paprika, garlic powder and onion powder.

3

Taste and adjust — more brine for tang, more ketchup for sweetness.

4

Chill for at least 30 minutes before serving. Keeps for up to a week in the fridge.

Chef's Tip

Chop the pickles as finely as you can so they blend into the sauce rather than sliding off the burger.
