Invented in 1930 by Pat Olivieri in South Philadelphia. Cheese wasn't added until the 1940s.
Philadelphia's greatest contribution — thinly shaved ribeye with caramelised onions and melted cheese in a toasted hoagie roll. Iconic, indulgent, irreplaceable.
Caramelise onions over medium heat 20 minutes. Push to side.
Spread shaved steak on high-heat griddle. Season. Chop and flip with spatula.
Mix with onions when cooked. Form into roll-shaped portions.
Lay cheese over each. When melted, scoop into rolls.
Serve immediately.
Freezing the ribeye briefly makes it possible to shave paper thin at home.
