Australia's hand pie. Sold at every footy ground, petrol station and bakery. Eating them at the cricket is a sacred ritual.
Australia's most loved hand-held food — a hot water pastry case filled with beef mince in a rich gravy, eaten with a squeeze of tomato sauce at the football.
Brown mince with onion. Add flour, stock and sauces. Simmer until thick. Cool.
Line pie tins with shortcrust. Fill. Top with puff pastry.
Bake at 200°C for 25-30 minutes.
Serve with tomato sauce.
The filling must be cold before adding the pastry — hot filling makes the base go soggy.
