Australia and New Zealand both claim to have invented it, named after ballerina Anna Pavlova's 1926 tour.
Australia's great dessert — a vast meringue disc with a crispy shell and marshmallowy interior, topped with whipped cream and passionfruit.
Whisk egg whites to stiff peaks. Add sugar one spoon at a time. Fold in vinegar and cornflour.
Spread onto a lined tray into a circle.
Bake at 130°C for 90 minutes. Turn oven off. Leave inside 1 hour.
Top with cream and fruit.
Never open the oven during baking — the temperature change cracks the meringue.
