Whitebait Fritters

New Zealand

A New Zealand seasonal obsession. Whitebait season on the West Coast draws dedicated fishers. The price is extraordinary; the flavour is delicate.

New Zealand's seasonal delicacy — whole tiny whitebait bound in egg, pan-fried until just set. Simple, precious and eaten on buttered white bread.
