Hokey Pokey Ice Cream

New Zealand

New Zealand's ice cream identity. Hokey pokey is the local word for honeycomb. Every New Zealand child grows up eating it.

New Zealand's favourite ice cream — vanilla ice cream with chunks of golden honeycomb toffee. The nation's best-selling flavour since the 1950s.

Ingredients

150gcaster sugar
60mlgolden syrup
2 tspbicarbonate of soda
1Lgood vanilla ice cream, softened slightly

Method

1

Heat sugar and golden syrup in a saucepan until golden caramel, 5 minutes.

2

Remove from heat. Add bicarb. Stir — it will foam dramatically.

3

Pour onto a lined tray. Cool completely. Crush into chunks.

4

Fold into softened ice cream. Refreeze.

Chef's Tip

Add the bicarb the moment the caramel is golden — too dark and it will taste bitter.
