Lolly cake has been made in New Zealand homes since the 1950s and is served at every birthday party, school fair and bake sale. It is universally loved and completely unique to New Zealand.
New Zealand's most nostalgic no-bake treat — a log of malt biscuits and butter bound together with condensed milk and studded with fruity marshmallow lollies, rolled in coconut.
Mix crushed biscuits with melted butter and condensed milk until combined.
Fold in halved lollies.
Turn out onto a sheet of cling film. Form into a log shape.
Roll in desiccated coconut, pressing it firmly onto all surfaces.
Wrap tightly in cling film. Refrigerate at least 2 hours.
Slice into rounds to serve.
The lollies must be halved so they are evenly distributed — whole lollies are too large and create uneven slices.
