The ultimate Bolivian street food communal platter. Eaten late at night, often after drinking. The name means macho poke.
Bolivian street food platter — diced beef, sausage, chips, boiled eggs, peppers and chilli piled on a board. Cochabamba's great communal eating experience.
Fry beef and sausage in very hot oil until browned. Add peppers and chilli.
Pile chips on a large board or plate. Top with meat, eggs and vegetables.
Drizzle with soy sauce. Eat communally.
Serve immediately — the chips must be crispy, not soggy under the meat.
