Eaten every Saturday throughout Brazil. A meal that takes all morning to make and all afternoon to eat.
Brazil's national dish — a rich black bean stew with pork ribs, smoked sausage and dried meats, served with rice, kale, farofa and orange. Saturday's great feast.
Simmer all meats in water until tender, 1.5 hours.
Add drained beans, onion, garlic and bay leaves.
Simmer covered 1.5 more hours until beans are creamy and broth is thick.
Serve with all accompaniments.
The beans must be creamy and the broth should coat a spoon — thin feijoada is unfinished.
