Pão de Alho

Brazil

A staple at Brazilian steakhouses, pão de alho is often served alongside the first cuts of grilled meat as guests wait for the main course.

Brazilian garlic bread — soft rolls stuffed with a punchy garlic-and-herb butter and baked until the crust turns golden, a staple of every churrascaria.

Ingredients

6soft bread rolls
100gbutter, softened
6garlic cloves, crushed
2 tbspparsley, chopped
50gparmesan, grated

Method

1

Mix butter, garlic, parsley and parmesan into a smooth paste.

2

Cut deep slits into each roll without cutting all the way through.

3

Stuff garlic butter generously into the slits.

4

Wrap in foil and bake at 200C for 15 minutes, then open the foil and bake 5 more minutes until golden.

Chef's Tip

Wrapping in foil first steams the bread soft before the final blast of direct heat crisps the crust.
