Brazil's most eaten snack. Found in every bakery, petrol station and office from 6am. The distinct chewiness comes from tapioca starch.
Brazilian cheese bread — puffy, chewy, gluten-free rolls made with tapioca flour and strong cheese. Eaten throughout the day, they emerge from the oven at every Brazilian padaria.
Heat milk, water and oil to boiling. Pour over tapioca flour. Beat until smooth.
Cool 10 minutes. Beat in eggs and cheese.
Roll into balls. Bake at 200°C for 18-20 minutes until puffed and golden.
Serve straight from the oven — pão de queijo deflates and loses its charm as it cools.
