Charquicán

Chile

One of Chile's oldest recipes. The Mapuche people preserved meat as charqui long before Spanish arrival.

Chilean beef and vegetable hash — dried beef rehydrated and cooked with potato, squash, corn and beans. A Mapuche dish that sustained Chileans through cold southern winters.
