Sold from carts on rainy days throughout Chile. There is a Chilean saying: sopaipilla day is rainy day.
Chilean pumpkin fritters — flat fried dough discs made with squash and flour, served sweet with chancaca sugar syrup or savoury with pebre. Chile's street food staple.
Mix squash, flour, salt and butter to a smooth dough.
Roll to 5mm thickness. Cut into rounds. Prick with a fork.
Fry at 170°C for 3 minutes each side until golden. Drain.
Serve with chancaca syrup or pebre.
Prick the sopaipillas before frying — without pricking they puff up and cook unevenly.
