A dish of the Guaraní people. The sweet-savoury balance is characteristic of traditional Paraguayan cooking.
Paraguayan squash pudding — ripe squash cooked with corn flour, cheese and sugar into a thick, sweet-savoury pudding. A uniquely Paraguayan dish.
Mix mashed squash with cornmeal, cheese, sugar, butter and salt.
Cook in a pan over medium heat, stirring constantly, for 20-25 minutes until very thick.
Serve warm as a side dish.
The mixture must be stirred constantly — it catches easily and burns on the bottom.
