The ancient food of the Guaraní people, unchanged for centuries. Eaten at breakfast and as a snack throughout the day.
Paraguayan cassava flatbread — a thin cake of cassava starch and cheese fried dry on a clay griddle. The most ancient Guaraní food.
Mix cassava starch, cheese, egg, butter and salt. The dough will be crumbly.
Press into a dry heavy pan in a thin layer.
Cook over medium heat 5 minutes each side until golden and holding together.
The dough is naturally crumbly — press it firmly into the pan and don't try to roll it.
