Sold from charcoal carts on Lima's streets since colonial times. Once considered poor food, now beloved across all classes.
Peruvian grilled beef heart — marinated beef heart on skewers, grilled over charcoal and served with boiled potato and ají sauce. Lima's most iconic street food.
Marinate beef heart in garlic, ají panca, cumin, vinegar and salt for 2 hours.
Thread onto skewers.
Grill over charcoal, basting with marinade, 4 minutes each side.
Serve with boiled potato.
Don't overcook — beef heart becomes tough quickly. It should still be slightly pink.
