The national pastime of Kenya. Nyama choma joints are found on every roadside, serving cold beer and slow-cooked meat.
Kenya's beloved grilled meat — goat or beef roasted over charcoal until smoky and charred, eaten with bare hands alongside ugali and kachumbari salsa.
Season meat with salt and pepper only.
Grill over charcoal on low heat, turning regularly, for 40-50 minutes.
The exterior should be charred and smoky, the interior moist.
Serve on a board with kachumbari and ugali.
Low and slow over charcoal — nyama choma should not be rushed over high heat.
