The food security of East Africa. No matter how complex the accompanying dish, ugali is the foundation.
Kenyan maize meal — white maize flour stirred into boiling water until stiff. The staple of East Africa, eaten at every meal with stew, sukuma or nyama choma.
Bring water and salt to boil. Pour in maize meal in a steady stream, stirring.
Cook 5-7 minutes, stirring constantly until very stiff. It should pull away from the sides.
Shape into a mound or cut into pieces.
The mound must be firm enough to pull a piece off and form it into a scoop for stew.
