Biriyani ya Zanzibar

Tanzania

Zanzibar was the hub of the East African spice trade. Its biryani reflects every culture that traded here.

Zanzibari biryani — fragrant rice layered with spiced meat, hard-boiled eggs and potatoes. More aromatic than Indian biryani, reflecting centuries of Persian, Arab and Indian influence.
