Kafteji

Tunisia

A speciality of Tunis that has no equivalent in any other cuisine. The combination of deep-fried vegetables and egg is uniquely Tunisian.

Tunisian fried vegetable hash — aubergine, potato, pepper and courgette all deep-fried separately then chopped together with egg and seasoned with harissa. A uniquely Tunisian dish.
