The great preserved meat of the Middle East. Armenian, Turkish and Lebanese communities all claim the finest version.
Armenian cured spiced beef — beef fillet coated in a thick paste of fenugreek, garlic and paprika, air-dried for weeks until firm. Sliced paper thin and eaten with eggs or in sandwiches.
Rub beef thoroughly with salt. Leave 24 hours. Rinse and dry.
Mix spices with garlic and enough water to make a thick paste.
Coat beef completely in paste. Hang to air-dry 2-3 weeks in a cool, airy place.
Slice paper thin to serve.
The drying environment must be cool and well-ventilated — humidity causes spoilage.
