Ginger-scallion sauce is the traditional accompaniment to white-cut chicken in Cantonese cooking. It is an uncomplicated sauce that makes anything it touches taste better.
A fragrant, raw Chinese sauce of finely chopped ginger and spring onion with hot oil. Spooned over poached chicken, noodles and rice.
Mix the spring onions, ginger and salt in a heatproof bowl.
Heat the oil in a small pan until shimmering and just starting to smoke.
Carefully pour the hot oil over the mixture. It will sizzle.
Stir in the soy sauce, vinegar and sesame oil. Let it sit for 10 minutes. Serve with poached chicken, rice or noodles.
Chop the ginger and spring onion by hand as finely as you can. The hot oil cooks and mellows them.
