Bao bing, or thin pancakes, are the traditional wrapper for Peking duck, served with sliced spring onion, cucumber and sweet bean sauce.
Thin, tender Chinese wheat pancakes, steamed and used to wrap Peking duck, hoisin and cucumber.
Put the flour in a bowl and pour in the boiling water. Stir with chopsticks, then knead into a smooth dough. Cover and rest for 30 minutes.
Roll the dough into a log and divide into 16 pieces. Flatten two pieces together, with a little sesame oil between them, and roll out to a 15cm circle.
Cook in a dry, non-stick pan over a medium heat for about 1 minute per side until the pancake puffs and has pale speckles.
Peel the two layers apart while still warm. Stack and cover with a damp cloth. Steam for 5 minutes to reheat if needed.
Rolling two pancakes together with oil between them keeps them thin and soft, and they peel apart easily.
