Indonesia's national dish — wok-fried rice with kecap manis, shrimp paste and chillies, topped with a fried egg and prawn crackers.
Fry shallots, garlic and chilli until fragrant. Add shrimp paste.
Add protein and cook through.
Add rice. Toss over highest heat breaking up clumps.
Add kecap manis and soy. Toss 2 minutes.
Fry eggs alongside with runny yolk.
Serve rice with fried egg on top.
Day-old cold rice is essential — fresh rice becomes clumpy and steams rather than fries.
