The centrepiece of Tsagaan Sar New Year. Mongolian families make hundreds, eating 10-20 each at New Year visits.
Mongolian steamed dumplings — thick dough rounds filled with minced lamb and onion, steamed until fluffy. Eaten at Tsagaan Sar Mongolian New Year in the hundreds.
Make dough. Rest 30 minutes. Mix lamb with onion, garlic and pepper.
Roll dough into circles. Fill with a tablespoon of lamb. Pinch into pleated dumplings.
Steam 15-18 minutes.
Serve with soy sauce.
Seal the dumplings tightly — open seams allow the juices to escape during steaming.
