Cambodia's most famous dish internationally. The name refers to the shaking motion of tossing the beef.
Cambodian shaking beef — cubed beef marinated in oyster and soy sauce, stir-fried on high heat with onion, served on a bed of tomato and lettuce with lime-pepper dipping sauce.
Marinate beef in oyster sauce, soy and sugar 15 minutes.
Stir-fry in batches on the highest heat — the shaking motion keeps the beef moving.
Add onion. Toss 1 minute.
Serve over tomato and lettuce with lime-pepper sauce.
The high heat is everything — loc lac cooked at low heat is simply beef in sauce.
