100gfreshly grated coconut
200mlwater
1 tspsalt
coconut milk and fish or chicken curryto serve

Method

1

Mix rice flour with salt and enough water to just moisten — it should clump when pressed but remain granular.

2

Layer into a pittu maker or steamer, alternating with grated coconut.

3

Steam 15-20 minutes until set. Invert onto a plate.

4

Serve with coconut milk poured over and curry alongside.

Chef's Tip

The rice flour should be just moistened, not wet — the steam does the cooking.
