The dish of Dalmatian celebrations — weddings, first communions and Easter Sunday.
Dalmatian braised beef — marinated overnight in wine vinegar and spices, then slow-braised with prunes, wine and vegetables. Split's most famous dish.
Stud beef with garlic. Marinate in vinegar with spices for 24 hours.
Remove beef. Pat dry. Brown all over. Fry onions and carrots.
Add wine, prunes, orange and marinated spices. Braise at 160°C for 3 hours.
Remove beef. Blend sauce smooth. Serve sliced with gnocchi.
Marinating overnight is not optional — the acid tenderises the meat and the spices permeate it.
