Pizza Margherita was created in 1889 for Queen Margherita of Savoy, garnished in the red, white and green of the Italian flag.
The original Neapolitan pizza — a thin charred crust with San Marzano tomatoes, buffalo mozzarella and fresh basil. Three colours of the Italian flag.
Mix flour, yeast and salt. Add water and oil. Knead 10 minutes until smooth. Prove 1 hour.
Preheat oven to maximum with a baking stone inside for 30 minutes.
Stretch dough into thin rounds. Spread tomatoes thinly, leaving border.
Bake 8-10 minutes until crust is charred at edges. Add mozzarella in last 2 minutes.
Top with basil and a drizzle of olive oil. Serve immediately.
The hottest possible oven is essential. A baking stone preheated for 30 minutes is the closest to a wood-fired oven you can get at home.
